		<description>I started cooking Lenten meals at our parish on Friday nights in conjunction with Stations of the Cross services to help families participate in faith life and provide and opportunity for families to socialize after a busy work week.

With the Knights of Columbus (ABVM - Belmont, MI) I feature a different meatless theme menu every Friday evening during Lent.  We may do 1 fish fry - we actually bake our fish with or without breading but the rest are theme menus:  Every meal plan includes a Green Salad Bar, Relish Tray, One Featured Soup, and often an additional soup, and finally one or two desserts (one fancy and the other very basic such as fruit with no sweeteners.  We publish the menu in the church bulletin and on the ABVM Parish website.

The Themes are:  Starting with the 1st Friday  of Lent 

                             Blast From The Past     Features Grilled Cheese Sandwiches (cheddar, pepperjack, 
                                                                       mozzerrella), Tuna Salad, Tuna Melts, PB&amp;J sandwich, Tomato 
                                                                       Soup, and Potato Soup -  Dessert Jello/ Pudding/and fruit parfait.

                             Red, White, &amp; Yellow Pasta   Features  Vegetable Lasagna, Marinera Sauce, Alfredo Sauce, 
                                                                                and a Cheddar Cheese Sauce with a couple of different kinds 
                                                                                of Pasta, Garlic Bread,  Italian Vegetables, &amp; Minestrone Soup

                           Chinese         Features  Shrimp Fried Rice, Chow Mein, Egg Drop Soup, Vegetable or Shrimp
                                                    Egg Rolls, Chinese Cole Slaw, and Fortune Cookies

                             Pizza, Pizza  Features a wide range of meatless Pizza.  Red Pizza Sauce, Pesto Sauce,
                                                    Alfredo Sauce,  Garlic Sauce.  Cheeses include Mozzerella,  Parmesan, 
                                                   Cheddar, and Feta.  Toppings include onions, green and black olives, 
                                                    mushrooms, artichokes, green and red peppers, crushed Doritos, 
                                                    canned corn, light kidney beans jalapeno and pepperonci,  diced tomato, fresh
                                                    spinach, and of  course anchovies.  (Northern and Southern Italian, Greek,    
                                                    Mexican, Cheese,  and regular Veggie).  I buy the 1/2 baked pizza crusts from
                                                    Sam&#039;s Club or Gordon Food Service  (about $1.50 per 14&quot; crust).

                                                    Dessert Pizza - canned fruit pie filling with crushed cinnamon graham crackers
                                                    or an oatmeal based struessel topping.   Also S&#039;More Toppings (chocolate 
                                                    Sauce, Marshmallows, chocolate chips, coconut, chopped nuts),  Crushed
                                                    Pineapple Carmel Sauce, Maraschino Cherries and Crushed Graham 
                                                    Crackers

                       Mexican           Featuring Spanish Rice, Bean and Cheese Burrito, Cheese Quesidia, Chips and
                                                 Chunky Salsa (2 cans finely diced tomato, 1 can each of rinsed  pinto, black, 
                                                 kidney beans, sliced, 6  green onion, minced garlic, 1 chopped red and green 
                                                 bell, pepper, 3 minced jalapeno, 1/2 cup chopped fresh cilantro, 1 can sweet 
                                                  corn, and juice from 3 limes).  Toppings for salad bar to make a Taco Salad
                                                  minus the meat.      Dessert - baked bananas (plantains) with honey, lemon,
                                                  pecans, and cinnamon baked on a pizza crust (tortilla).

                     Yooper                Featuring White Fish Pasties (fish, potato, onion, rutabaga, carrot and celery in 
                                                   a pastry shell) , cole slaw, green beans.
