Blender Batter Pancakes

Have you heard of this great recipe for getting more of a variety of whole grains into your diet? My kids asked before bed tonight if they could have "letter" pancakes for breakfast. It took me less than 5 minutes to get these started, and in the morning I'll add a few more ingredients, blend it up and pour it into the hot pan. EASY!
Much more nutritious than even regular whole grain recipes, because soaking it overnight breaks down the phytic acid, which can bind with minerals and cause deficiencies. (I'm doing a post with more detail about this soon.) I even got this comment from our TEEN, believe it or not: "Mom, these are the best pancakes you've ever made!"
